Rotary encoder setting RGB LED color

Took forever to find code that worked for the rotary encoder, but I learned a lot through this project. There’s a bunch of source code for rotary encoders out there, but the only one that worked for me was this one. This encoder from Adafruit also doubles as a pushbutton, so I figured that I could select the color component using that and use the knob rotation to set the value.
